This recipe you can change in every way you like – just according to your personal taste, with or without sauce, as a little snack, for a picnic or as a main dish.
For about 20 little pieces you need approx.:
200 – 300 g aged bread or rolls
400 ml oat milk (or almond milk)
1 little onion
1 – 2 cloves of garlic
1 bundle of fresh herbes (parsley, chives, basil, sage)
Spices of your choice: pepper, paprika, mixed spices
Salt and pepper
Optionally 2 tbsp corn or chickpea flour for binding the dough
Vegetable oil for frying
Cut the bread into small pieces and pour the milk over it. Leave it for 10 – 15 minutes.
Cut the onion and the garlic very small, chop the herbs. Squeeze out the bread and knead onion, garlic, spices and herbs until a well-bound dough is formed. If necessary, add some of the flour.
Form now the little rolls and put it in a greased casserole. Bake in a preheated oven with top/bottom heat at 200 degrees Celsius for about 20 minutes.
Serve it hot or cold, with a dip like aioli, fresh cream or guacamole.
If you change the ingredients, you can also use for example raisins for sweet bread balls and sugar and cinnamon instead of salt and pepper. Serve it with a vanilla sauce and you will love it as well.
