A new recipe for “don’t throw it away”: Semmelknödel (Bread dumplings)

As promised, we will help you from time to time with new recipes for your bread “leftovers”. And like always, we try to find the best recipes and Semmelknödel definitely are a typical German dish.

All you need for the bread dumplings are either old Kaiser rolls, old Bretzels or old white bread – or a mixture of these three.

 

For 4 portions you need:

250 g of bread, cut in small cubes

50 g Butter

½ onion, chopped

3 table spoons of parsley, chopped

3 eggs

250 ml milk

3 table spoons of flour

salt

 

Fry the onion in the butter until translucent, then leave to cool. Whisk the eggs, mix with the milk and salt and pour over the bread cubes, leave to soak.

Now mix the parsley, the cooled onions and the bread mixture well and let it stand for a while, then mix in the flour.

Boil salted water in a large saucepan, form dumplings from the mixture and add the dumplings to the hot (not boiling) water, let simmer for 10 minutes and the delicacy is ready. Serve the bread dumplings with plenty of sauce!
